Grilled Cheese and Apple

Grilled cheese is one of our family’s top lunches. There are a few ways to shake up the old fave, and this one is simple and totally delicious: add apple slices! Apples and cheese are a great snack on their own and taste, dare I say, even better grilled on lightly buttered bread. Other yummy variations we like are grilled cheese with pesto, grilled cheese and tomato and grilled cheese and bacon. Honestly though, the possibilities are endless; cheese is great!

Homemade bagels are nothing short of a staple in our house. Beyond their obvious place as a breakfast anchor, they’re also great bookends for a variety of sandwiches. This BLT uses Applegate Farms Sunday bacon, a healthier, delicious alternative to heavily processed bacon. Rounding it out is tomato, romaine lettuce, and of course the fourth requirement in a great BLT: Mayo.

BBQ chicken with mixed greens

A thank you to our local farmer’s market and my brother-in-law for this sandwich. Thinly sliced chicken breast is topped with my brother-in-law’s homemade BBQ sauce (a concoction of real Maine maple syrup, ketchup, and more…recipe to come), then placed on fresh pesto bread (from the farmer’s market) and topped with farmer’s market goat cheese, sliced tomatoes, and farmer’s market mixed greens.

A lean ground turkey burger, with garlic, served on an organic bun courtesy of Barowski’s. With lettuce, provolone, relish, vegan mayo, and mustard. Organic fries on the side.

At a recent trip to the Orono farmer’s market, we picked up some amazing herb sourdough bread. Here it’s holding ham, goat cheese, lettuce, vegan mayo and mustard.

This is an outstanding, unique summer treat, and a great choice for vegetarians and meat-eaters alike! Garlic-lemon mayo combined with feta cheese and grilled vegetables on focaccia bread - all in less than twenty minutes! The recipe can be found on AllRecipes.com.

Homemade garlic & turkey meatballs, on a Barowsky’s organic whole wheat bun with shredded mozarella and Bertoli’s organic marinara. A delicious, quick snack for lunch provided you’ve got a couple of meatballs left over from last night’s pasta.

Turkey melt:

-Barowsky’s organic wheat hot dog roll
-Hormel natural turkey
-Vegan mayo
-French’s mustard
-Graded Cabot sharp cheddar
-Diced onions

Heated at 350 for 4-5 minutes
